Changing Printer Colour Profiles and Printing in Grey-Scale on Mac OSX

Follow the usual procedure to print a page (normally this would be pressing Command+F, or going to 'File', and then 'Print'), but do NOT click on the print button. Once at the printing screen, you should see a drop-down menu which says 'Copies and Pages' (by default). Click on this, and then select 'Colour Sync'. If it is not already selected, click on the 'Other Profile' radio button; a new window should appear with a list of profiles to choose from. In the search box of this window, type 'gray' (not that this is the U.S. spelling of the word, and not the U.K. spelling), select the general grey option, and then click 'OK'. You are now ready to print in grey-scale.
